Lemon Peppa Corn Salad
Ingredients:
4 cups fresh or frozen corn kernels (thawed if frozen)
1 cup cherry tomatoes, halved
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1-2 teaspoons Lemon Peppa Steppa spice blend
Salt and Black pepper, to taste
Optional Add-ins:
1 avocado, diced
1/4 cup crumbled feta or cotija cheese
Instructions:
Prepare the Vegetables:
If using fresh corn, you can either boil it for about 3-5 minutes until tender, or grill it for a lovely charred flavor. Once cooked, let it cool and then cut the kernels off the cob.
If using frozen corn, ensure it's fully thawed and drained of any excess water.
Mix the Salad:
In a large bowl, combine the corn kernels, cherry tomatoes, red bell pepper, green bell pepper, and red onion.
Add the chopped cilantro to the bowl.
Make the Dressing:
In a small bowl, whisk together the olive oil, fresh lemon juice, and Lemon Peppa Steppa spice blend.
Taste the dressing and add salt and black pepper as needed.
Combine and Serve:
Pour the dressing over the salad and toss everything together until well combined.
If using, gently fold in the diced avocado and sprinkle the crumbled cheese on top.
Chill and Serve:
Let the salad sit for at least 15 minutes to allow the flavors to come together.
Serve chilled or at room temperature.
