Lemon Peppa Corn Salad

Ingredients:

  • 4 cups fresh or frozen corn kernels (thawed if frozen)

  • 1 cup cherry tomatoes, halved

  • 1/2 red bell pepper, diced

  • 1/2 green bell pepper, diced

  • 1/4 red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon fresh lemon juice

  • 1-2 teaspoons Lemon Peppa Steppa spice blend

  • Salt and Black pepper, to taste

Optional Add-ins:

  • 1 avocado, diced

  • 1/4 cup crumbled feta or cotija cheese

Instructions:

  1. Prepare the Vegetables:

    • If using fresh corn, you can either boil it for about 3-5 minutes until tender, or grill it for a lovely charred flavor. Once cooked, let it cool and then cut the kernels off the cob.

    • If using frozen corn, ensure it's fully thawed and drained of any excess water.

  2. Mix the Salad:

    • In a large bowl, combine the corn kernels, cherry tomatoes, red bell pepper, green bell pepper, and red onion.

    • Add the chopped cilantro to the bowl.

  3. Make the Dressing:

    • In a small bowl, whisk together the olive oil, fresh lemon juice, and Lemon Peppa Steppa spice blend.

    • Taste the dressing and add salt and black pepper as needed.

  4. Combine and Serve:

    • Pour the dressing over the salad and toss everything together until well combined.

    • If using, gently fold in the diced avocado and sprinkle the crumbled cheese on top.

  5. Chill and Serve:

    • Let the salad sit for at least 15 minutes to allow the flavors to come together.

    • Serve chilled or at room temperature.
