Jerk Chicken Tacos w/ Mango Salsa
Ingredients:
For the Jerk Seasoning Rub:
2-3 tablespoons Don’t Be a JERK spice blend
1/4 cup olive oil
For the Tacos:
1.5 lbs boneless, skinless chicken breasts
Corn or flour tortillas
1 cup shredded cabbage or coleslaw mix
Lime wedges, for serving
Fresh cilantro, chopped, for garnish (optional)
For the Mango Salsa:
2 ripe mangoes, peeled, pitted, and diced
1/2 red onion, finely chopped
1 red bell pepper, diced
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
Juice of 1-2 limes
Salt and black pepper, to taste
Instructions:
Prepare the Jerk Seasoning Rub:
In a bowl, combine Don’t Be a JERK spice blend with oil and mix well to form a paste.
Marinate the Chicken:
Rub the jerk seasoning paste all over the chicken, ensuring they are well coated. Allow the chicken to marinate for at least 30 minutes to let the flavors infuse.
Make the Mango Salsa:
In a separate bowl, combine diced mangoes, finely chopped red onion, diced red bell pepper, minced jalapeño, chopped cilantro, lime juice, salt, and black pepper. Mix well and set aside.
Cook the Chicken:
Preheat a grill or grill pan over medium-high heat. You can also air fry them.
Grill or air fry the chicken for about 8-10 minutes per side or until fully cooked, with an internal temperature of 165°F (74°C).
Let the chicken rest for a few minutes before slicing it into strips.
Assemble the Tacos:
Warm the tortillas according to the package instructions.
Fill each tortilla with slices of jerk chicken.
Top with shredded cabbage or coleslaw mix.
Spoon mango salsa over the chicken.
Garnish and Serve:
Garnish with fresh cilantro if desired.
