Chicken Fajitas
Ingredients:
1 pound boneless, skinless chicken breasts, thinly sliced
1 large bell pepper (any color), thinly sliced
1 large onion, thinly sliced
2 tablespoons oil
4 teaspoons South of the Border seasoning
Additional salt and pepper to taste
Juice of 1 lime
8 small flour tortillas
Optional toppings: sour cream, salsa, guacamole, shredded cheese, chopped cilantro
Instructions:
Prepare the Chicken:
Season the thinly sliced chicken with South of the Border seasoning and any additional salt, and pepper. Toss to coat the chicken evenly.
Sauté the Vegetables:
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
Add sliced onions and bell peppers to the skillet. Sauté for 3-5 minutes or until the vegetables are tender-crisp. Remove them from the skillet and set aside.
Cook the Chicken:
In the same skillet, add the remaining 1 tablespoon of oil. Add the seasoned chicken slices and cook for 5-7 minutes or until the chicken is cooked through and slightly browned.
Combine and Finish:
Add the sautéed vegetables back to the skillet with the cooked chicken. Stir to combine and let it cook for an additional 2-3 minutes to allow the flavors to meld.
Squeeze the juice of one lime over the mixture and give it a final toss.
Serve:
Warm the flour tortillas according to the package instructions.
Spoon the chicken and vegetable mixture onto each tortilla.
Add your favorite toppings such as sour cream, salsa, guacamole, shredded cheese, and chopped cilantro.
