Cajun Shrimp & Grits

Ingredients:

For the Cajun Shrimp:

  • 1 pound (450g) large shrimp, peeled and deveined

  • 1 1/2 tablespoons Not So Cajun spice blend

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • Chopped fresh parsley for garnish

For the Grits:

  • 1 cup quick-cooking grits

  • 4 cups water or chicken broth

  • Salt and pepper to taste

  • 1 cup shredded sharp cheddar cheese (optional)

  • 2 tablespoons unsalted butter

Instructions:

Prepare the Grits:

  1. In a medium saucepan, bring 4 cups of water or chicken broth to a boil.

  2. Slowly whisk in the grits, reduce the heat to low, and simmer, stirring occasionally, for about 5-7 minutes or until the grits are thick and creamy.

  3. Stir in salt, pepper, shredded cheddar cheese (if using), and butter. Keep warm while you prepare the shrimp.

Prepare the Cajun Shrimp:

  1. In a bowl, combine Not So Cajun, salt, and pepper. Toss the shrimp in the seasoning mixture until well coated.

  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

  3. Add minced garlic and sauté for about 30 seconds until fragrant.

  4. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side or until they turn pink and opaque.

  5. Add fresh lemon juice and the remaining tablespoon of butter to the skillet. Stir to combine and coat the shrimp.

Serve:

  1. Spoon a generous portion of the creamy grits into each bowl.

  2. Top the grits with the Cajun shrimp and some of the remainder juice.

  3. Garnish with chopped fresh parsley for a burst of freshness.

  4. Serve immediately and enjoy!
