Roasted Veggie Medley
Ingredients:
For the Veggie Medley:
4 cups mixed vegetables, chopped (e.g., carrots, bell peppers, zucchini, cherry tomatoes, broccoli, cauliflower)
2 tablespoons avocado oil or olive oil
2 tablespoons Essentials spice blend
Additional salt and black pepper to taste
Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Veggie Medley:
In a large mixing bowl, toss the chopped mixed vegetables with olive oil until they are evenly coated.
